Here at the 1802 House our guests health and safety comes first, always. Recently, this has meant a break from our freshly made cookies usually available in the lobby. We miss them, and we know you have missed them too. So, we’ve put together some of Carl’s cookie recipes from guest favorites so you can make them at home! We’re still making our delicious three course breakfasts and those recipes are top secret, so you’ll have to book a stay to get your hands on those goods. Whether you can visit us this summer, or you’re saving your vacation for the future, we’ll put the kettle on for you.

Shortbread (makes 15-20)

- 1/2 cup of softened unsalted butter
- 1/4 cup of white granulated sugar, plus some for dusting
- 1 1/4 cups of plain flour
Step 1: Preheat the oven to 300°F and line a baking tray with parchment paper
Step 2: Combine sifted sugar with softened butter and beat until creamy
Step 3: Add sifted flour and mix until it is just coming together as a paste and kneed into ball. (If mixture is sticking to your fingers, place in refrigerator for a few minutes
Step 4: Lightly dust your counter, or rolling surface, with either flour or sugar, roll out mixture to about 1/4″ thick and use cookie cutters to cut into desired shapes. Gather any scraps into a ball and repeat
Step 5: Transfer to pre-lined baking sheet, about an inch apart
Step 6: Bake in the center of preheated oven for approx. 30 minutes or until slightly browned
Step 7: Remove to cooling rack and sprinkle with with sugar while warm (optional.) allow to cool completely
Optional: You can add a teaspoon lemon oil, vanilla essence, etc. if desired during the 1st step but it’s a capital offense in England to alter them in this manner and they will be a Frankenstein version of traditional shortbread and not “real” shortbread.

White Chocolate and Cranberry Cookies (makes 15-20)
- 1/2 cup of softened unsalted butter
- 1/2 cup of packed brown sugar
- 1/2 cup of white granulated sugar
- 1 egg
- 1 1/2 cups of all purpose flour
- 1/2 teaspoon of baking soda
- 3/4 cup of white chocolate chips
- 1 cup of dried cranberries
- Approx. 1 tablespoon of whiskey
Step 1: Preheat the oven to 375°F and line or grease a baking tray with parchment paper
Step 2: Combine the butter and sugars and beat until smooth, add egg and whiskey and mix until combined
Step 3: Mix the flour and baking soda in a separate bowl
Step 4: Add flour mixture, chocolate chips, and cranberries to wet ingredients and mix until combined. Do not over mix!
Step 5: Using a small scoop (roughly 2 tablespoons) spoon mixture onto a greased or lined baking sheet a few inches apart to allow them to spread
Step 6: Bake for about 9 minutes, or until cookies are starting to brown
Step 7: Remove from oven, allow to cool on cookie sheet for a few minutes and transfer to cooling rack.
