Roasted Pineapple with Yogurt, Banana and Passion Fruit

One of my favorite foods is Passion Fruit.  While really popular and readily available in the UK, we find it a little hard to find here in Kennebunkport, Maine.  It’s got a citrus flavor that pairs well with orange and tropical fruits.  The passion fruit comes from a round, hard fruit that’s fairly hollow inside when ripe.  You just cut it in half and scoop out the orange flesh, juice and seeds.  We eat the seeds and all, but they can be strained out depending on what you are using the fruit for.

Because we like to use passion fruit in our recipes year around here at the 1802 House Bed and Breakfast, we have to use alternatives to the fresh fruit.  These are available from multiple sources online.  You can buy frozen passion fruit puree which works well if you are using the fruit to bake with and need it unsweetened.  We also use the Monin Passion Fruit Puree which is a lightly sweetened syrup.  Great in smoothies and as a drizzle.

This roasted pineapple recipe is so easy and is a great combination of those fresh, tropical fruit flavors.  Use fresh pineapple if you can find a good ripe one.  If not, canned works just as well.

  • 12 slices fresh or canned pineapple
  • 1/4 cup turbinado sugar
  • 2 ripe bananas
  • Plain Greek Yogurt (we use Cabot)
  • Monin Passion Fruit Puree for drizzling


  1. Arrange pineapple slices on a lightly greased baking tray. Alternatively, use non-stick aluminum foil on the tray.

  2. Sprinkle the turbinado sugar evenly over the pineapple slices.

  3. Put the baking tray under the broiler and keep an eye on the fruit. You want it to brown lightly, not burn.

  4. Remove pineapple from the broiler and let sit to cool to room temperature.

  5. Plate with two pieces of pineapple, a scoop of yogurt and two slices of banana. Drizzle the passion fruit syrup over and serve.
